Poires Pralinées (Pears with Frangipane and Almond Praline)

Ingredients

Instructions

  1. Cook the pears as for compote and let them cool.
  2. Arrange them in a timbale.
  3. Soften a crème frangipane with a little raw cream and coat the pears with it.
  4. Place a well-moulded spoonful of crème Chantilly between each pear.
  5. Cover the whole with crushed almond praliné.
  6. Serve a Chocolate sauce, hot or cold, at the same time.
