Boudins Noirs à la Flamande (Black Puddings with Brown Sugar and Raisins)

Instructions

  1. Prepare the same composition as for the ordinary black puddings.
  2. Pick over, wash, swell in tepid water and drain well the currants and the Smyrna raisins.
  3. Add to the composition 100 grammes of brown cassonade sugar, 60 grammes of currants and as much Smyrna raisins.
  4. Fill, poach and cool as directed for the black puddings.
  5. To serve, score the puddings and grill them gently.
  6. Serve an apple marmalade at the same time, as at Carré de porc à la Marmelade de pommes.
