Boudins Noirs à la Flamande (Black Puddings with Brown Sugar and Raisins)

Ingredients
- Boudin noir composition
- 100 grammes brown cassonade sugar
- 60 grammes currants
- 60 grammes Smyrna raisins
- apple marmalade
Instructions
- Prepare the same composition as for the ordinary black puddings.
- Pick over, wash, swell in tepid water and drain well the currants and the Smyrna raisins.
- Add to the composition 100 grammes of brown cassonade sugar, 60 grammes of currants and as much Smyrna raisins.
- Fill, poach and cool as directed for the black puddings.
- To serve, score the puddings and grill them gently.
- Serve an apple marmalade at the same time, as at Carré de porc à la Marmelade de pommes.
