Cod à la Flamande (Flemish Style)

Instructions

  1. Cut the cod into slices 2.5 centimetres thick.
  2. Season with salt, pepper and nutmeg.
  3. Arrange the slices in a generously buttered sauté pan or tray and moisten with white wine to their level.
  4. Add chopped shallots and fines herbes.
  5. Lay rounds of lemon, pared to the flesh and seeded, over the slices, and bring to the boil.
  6. Poach in the oven for about 12 minutes.
  7. Dish the slices; bind the cooking liquid with crushed rusk.
  8. Let it boil for 5 minutes, then pour it over the slices.
