- Velouté
- Chicken breast
- Langue à l'écarlate
- Truffle
Instructions
- Prepare a chicken Consommé and bind it lightly with tapioca.
- Make a royale of foie gras purée and Velouté in equal parts, poach it in small octagonal timbale moulds and cut it into slices.
- Cut chicken breast, langue à l'écarlate and truffle with a column cutter to the shape and size of pastilles.
- Garnish the Consommé with the royale slices and the pastilles.
