Cod à la Portugaise (Portuguese Style)

Ingredients
- cod
- salt
- pepper
- 100 grammes butter
- 1 decilitre oil
- 100 grammes chopped onion
- 1 small clove of garlic
- 2 pinches chopped parsley
- 750 grammes tomatoes
- 400 grammes rice
- 2 decilitres white wine
Instructions
- Cut the cod into darnes of 250 grammes each and season them with salt and pepper.
- Put into a sauté dish, for 5 darnes: the butter, the oil, the chopped onion sweated in butter, the crushed garlic, the chopped parsley, the pressed and chopped tomatoes, the three-quarters cooked rice and the white wine.
- Arrange the darnes in the pan and cover it.
- Start over a fierce fire and cook covered for 10 minutes.
- Uncover for the reduction, which must come to the right point at the same time as the fish; the fish takes 18 minutes in all.
- Dish the darnes on a long plate and cover them with the cooking liquid and the garnish.
