Cod à la Portugaise (Portuguese Style)

  1. Cut the cod into darnes of 250 grammes each and season them with salt and pepper.
  2. Put into a sauté dish, for 5 darnes: the butter, the oil, the chopped onion sweated in butter, the crushed garlic, the chopped parsley, the pressed and chopped tomatoes, the three-quarters cooked rice and the white wine.
  3. Arrange the darnes in the pan and cover it.
  4. Start over a fierce fire and cook covered for 10 minutes.
  5. Uncover for the reduction, which must come to the right point at the same time as the fish; the fish takes 18 minutes in all.
  6. Dish the darnes on a long plate and cover them with the cooking liquid and the garnish.
