Soupe du Laboureur (Ploughman's Pork and Split Pea Soup)

Ingredients
- 300 grammes pork knuckle
- 300 grammes petit salé
- 2 1/2 litres water
- 1 medium carrot
- 1 medium turnip
- 2 whites of leeks
- 1/2 onion
- 1 décilitre split peas
Instructions
- Put the desalted pork knuckle and the blanched petit salé into a small country marmite with the water.
- Add the carrot, turnip, leek whites and half-onion, coarsely shredded.
- Add the split peas.
- Cook very gently for 3 hours.
- Serve with small pieces of the boned knuckle and of the petit salé.
