Consommé à la Grimaldi (Tomato-Flavoured Consommé with Celery Julienne)

Ingredients
- Ordinary Consommé
- Tomato purée
- Ordinary royale
- Celery
- Butter
Instructions
- Pass the tomato purée through a cloth and add 6 spoonfuls of it per litre of Consommé.
- Cut an ordinary royale up as desired.
- Cut the celery into julienne, stew it in butter and cook it down in the Consommé.
- Garnish the Consommé with the royale and the celery julienne.
