Instructions

  1. Poach the soft roes in salted water and cut them into thick escalopes.
  2. Dress them in small pleated porcelain cases, with 2 crayfish tails on each.
  3. Finish filling the cases with sauce Nantua.
  4. Place a fine slice of truffle on each case.
