Ingredients

Instructions

  1. Pot-roast the pheasant, keeping it very juicy and barely coloured, then put it in a terrine.
  2. Surround it with 125 grammes of peeled black grapes and 8 or 10 orange segments, without pips and trimmed to the flesh.
  3. Add to the pot-roasting juices a spoonful of game fumet and as much pomegranate juice as there is of the juices.
  4. Pour over the pheasant and serve at once.
