Pâte à Biscuit Manqué (Biscuit Manqué Batter)

Ingredients
- 500 grammes caster sugar
- 18 egg yolks
- 400 grammes flour
- 300 grammes butter
- 16 egg whites beaten to snow
- 3 spoonfuls rum
- butter and flour
Instructions
- Work the sugar and the yolks in an earthenware bowl until the mixture has become white and light.
- Add the rum, the flour, the well-firm whites, and the butter, melted and decanted.
- Put into buttered and floured moulds.
- Bake in an oven of moderate heat.
