- Fillets of sole
Instructions
- Prepare a fish Consommé flavoured with essence of sole.
- Make a royale of crayfish bisque.
- Poach the fillets of sole, keeping them very white, and cut them into lozenges.
- Garnish the Consommé with the royale and the lozenges of sole.
