Gras-double frit (Fried Tripe)

Ingredients

Instructions

  1. Cut the gras-double into rectangles.
  2. Season them with salt and pepper.
  3. Dip them in melted butter and sprinkle them with chopped parsley.
  4. Bread them à l'anglaise.
  5. Fry them in smoking oil until golden and crisp.
  6. Arrange on a napkin and serve at the same time one of the sauces: Diable, Hachée, Piquante, Rémoulade, Tartare or Tomate.
