Brochettes d'huîtres Lucifer (Fried Mustard Oyster Skewers)

Ingredients

• Fine « natives » oysters
• Thin mustard
• Egg and breadcrumbs
• Frying fat

Instructions

1. Poach the « natives » in their own liquor.
2. Beard them and sponge them dry.
3. Dip them in thin mustard.
4. Thread them onto skewers, 6 to a skewer.
5. Bread them à l'anglaise.
6. Fry them at the moment and arrange on a napkin.
