Spinach Pancakes

Ingredients
- spinach
- seasoning
- Yorkshire pudding mixture (see Preparations for Roasts à l'anglaise) — the same quantity as the spinach
- butter
Instructions
- Blanch some well-picked-over spinach.
- Season it and add the same quantity of Yorkshire pudding mixture.
- Cook this mixture in a small well-buttered frying pan, or in deep tartlet moulds.
