Instructions

  1. If the herrings are highly dried, pour boiling water over them and leave to soak for half an hour or more; fresh Yarmouth bloaters require no soaking.
  2. Cut off the heads and tails.
  3. Open the herrings at the back.
  4. Warm them through before the fire or upon the gridiron.
  5. If desired, rub with a bit of cold butter and season with a slight sprinkling of pepper or cayenne, or serve quite plain.
