Red Herrings, Common English Mode

Ingredients
- Red herrings
- a bit Cold butter
- a slight sprinkling Pepper or cayenne
Instructions
- If the herrings are highly dried, pour boiling water over them and leave to soak for half an hour or more; fresh Yarmouth bloaters require no soaking.
- Cut off the heads and tails.
- Open the herrings at the back.
- Warm them through before the fire or upon the gridiron.
- If desired, rub with a bit of cold butter and season with a slight sprinkling of pepper or cayenne, or serve quite plain.
