Fruit Salad

  1. Wash the pineapple well and let it dry completely. Hold the crown firmly in your left hand and use a fork in your right hand to pull away sections, shredding the flesh. This method avoids the hard center. After separating the sections, peel them carefully and cut into long thin slivers following the grain.
  2. Arrange the pineapple slivers in a star pattern on lettuce leaves in individual plates. Lay a narrow strip of pimento between each two slivers. Fill in the points of the stars with grapefruit pulp that has been freed of skin and seed and broken into convenient sized pieces. Lay additional pimento strips on top.
  3. Set the salad on ice until ready to serve, then drench generously with sweet French dressing.
