Roast Loin of Mutton

Instructions

  1. Have the butcher remove the skin from the loin of mutton.
  2. If economy is a concern, pare off the excess fat and melt it down for kitchen uses; otherwise, leave the fat on the joint.
  3. Manage the fat carefully during roasting to prevent even light burning, using the same method as for a saddle of mutton.
  4. Roast for 1 to 1½ hours if without fat, or 1¼ to 1¾ hours if roasted with fat attached.
  5. Carve either in its entire length or in oblique slices as preferred.
