Semolina Mold Stuffed with Meat

Instructions

  1. Prepare the semolina mixture as in recipe No. 230, mixing in all its butter and Parmesan.
  2. Pour into a buttered smooth or ring mold lined with buttered paper.
  3. Set a meat filling of little rolls or giblets, flavoured delicately with truffle or dried mushroom, in the centre.
  4. Cook in a bain-marie and serve hot with a little gravy over the top.
