Latteruolo (Corpus Domini Milk Tart)

Ingredients
- L milk
- g sugar
- count egg yolks
- count egg whites
- vanilla or coriander seed
Instructions
- Boil the milk with the sugar 1 to 1 1/4 hours, scenting with vanilla or coriander; strain and cool.
- Mix the cold milk well with the beaten eggs.
- Line a pan with pasta matta (No. 153), pour in the mixture, and bake at moderate heat with buttered paper on top to prevent browning.
- Cool fully, then cut into diamonds with the pastry base, like the migliaccio (No. 702).
