Latteruolo (Corpus Domini Milk Tart)

Ingredients

Instructions

  1. Boil the milk with the sugar 1 to 1 1/4 hours, scenting with vanilla or coriander; strain and cool.
  2. Mix the cold milk well with the beaten eggs.
  3. Line a pan with pasta matta (No. 153), pour in the mixture, and bake at moderate heat with buttered paper on top to prevent browning.
  4. Cool fully, then cut into diamonds with the pastry base, like the migliaccio (No. 702).
