Instructions
- Select freshly picked hyacinth beans. There are two preparations:
- First method: Stir-fry the beans in meat stock (高湯), then remove the meat and keep only the beans.
- Second method (superior): Stir-fry the beans in oil alone, using generous quantities of oil for fine flavor. The beans should be tender and soft — this is the mark of quality. Reject beans that are rough and withered, or thin and meager, as these come from poor soil and are not fit to eat.
