An Excellent Herring Salad

Ingredients
- 1 whole Norway herring, large
- cooked beet-root
- cold boiled potatoes
- pickled gherkins
- 1–2 whole sharp apples
- hard-boiled eggs
- 1 whole hard-boiled egg yolk
- salt
- oil
- vinegar
- thick sour cream
- curled celery leaves or parsley
Instructions
- Soak, skin, split, and bone a large Norway herring.
- Lay the two sides along a dish and slice them slopingly.
- Arrange in symmetrical order over the fish slices of cooked beet-root, cold boiled potatoes, and pickled gherkins.
- Add one or two sharp apples chopped small to the dish.
- Mince the yolks and whites of some hard-boiled eggs separately and add them to the dish.
- Add any other ingredients at hand that may serve to vary tastefully the decoration.
- Place these ingredients in small heaps of well-contrasting colours on the surface of the salad.
- Lay a border of curled celery leaves or parsley round the bowl.
- Rub the yolk of one hard-boiled egg quite smooth with some salt.
- Add oil and vinegar to the egg yolk as for an ordinary salad.
- Dilute the whole sauce with some thick sour cream.
