Bread for Frying Fish

Ingredients
- light stale bread
Instructions
- Cut thick slices from the middle of a loaf of light stale bread.
- Pare the crust entirely from the slices.
- Dry them gradually in a cool oven until they are crisp quite through.
- Let them become cold.
- Roll or beat them into fine crumbs.
- Keep them in a dry place for use.
- For ham or bacon coating: leave the bread all night in a sufficiently heated oven to brown and harden it entirely into equally-coloured crust.
- Reduce almost to powder and sift through a dredging-box onto the hams.
