Burnt Milk (Latte Brule)

Instructions

  1. Boil the milk with 100g sugar a full hour; cool.
  2. Melt 80g sugar; film a mold's bottom with some, and cook the rest to a dark caramel, stopping it with a little water to make a thick dark syrup.
  3. Beat the eggs, then combine milk, eggs and burnt sugar; taste and strain.
  4. Pour into the caramel-lined mold and cook in a bain-marie with heat above; shield with buttered paper once colored.
  5. Test with a straw; cool, loosen with a knife and unmold. Use an oval rimmed mold. Serves ten.
