A Finer Carrot Soup

Ingredients
- 3 ounces butter
- 2 pounds carrots
- 4.5 pints brown gravy soup
- salt
- cayenne
Instructions
- Scrape the carrots very clean and cut away all blemishes.
- Wash and wipe the carrots dry, then cut into quarter-inch slices.
- Melt the butter in a large stewpan.
- Add the sliced carrots and let them stew gently for an hour without browning.
- Pour in the brown gravy soup.
- Simmer for fifty minutes to an hour, until the carrots are sufficiently tender.
- Press the carrots and soup through a sieve or strainer.
- Add salt and cayenne if required.
- Boil the whole gently for five minutes, skimming off all scum.
- Serve the soup as hot as possible.
