A Finer Carrot Soup

Instructions

  1. Scrape the carrots very clean and cut away all blemishes.
  2. Wash and wipe the carrots dry, then cut into quarter-inch slices.
  3. Melt the butter in a large stewpan.
  4. Add the sliced carrots and let them stew gently for an hour without browning.
  5. Pour in the brown gravy soup.
  6. Simmer for fifty minutes to an hour, until the carrots are sufficiently tender.
  7. Press the carrots and soup through a sieve or strainer.
  8. Add salt and cayenne if required.
  9. Boil the whole gently for five minutes, skimming off all scum.
  10. Serve the soup as hot as possible.
