Stuffed Eggs

Ingredients
- 20 whole eggs
- butter
- pepper
- salt
- a little onion juice
- capers or pickle
- pimentos
- 2 per egg toothpicks
- wax paper
Instructions
- Boil the eggs for twenty minutes. Immediately plunge them into cold water and shell right away for the best flavor.
- Halve each egg lengthwise. While the yolks are still hot, mash them with plentiful butter, pepper, salt, a little onion juice, and finely minced capers or pickle. Add pimentos cut small. Work the seasoning well through the mashed yolks.
- Shape the seasoned yolk mixture into balls the size of whole yolks. Place each ball between two egg white halves and fasten together with a couple of toothpicks.
- Wrap each finished egg in wax paper and keep cool until needed.
