Stuffed Eggs

Instructions

  1. Boil the eggs for twenty minutes. Immediately plunge them into cold water and shell right away for the best flavor.
  2. Halve each egg lengthwise. While the yolks are still hot, mash them with plentiful butter, pepper, salt, a little onion juice, and finely minced capers or pickle. Add pimentos cut small. Work the seasoning well through the mashed yolks.
  3. Shape the seasoned yolk mixture into balls the size of whole yolks. Place each ball between two egg white halves and fasten together with a couple of toothpicks.
  4. Wrap each finished egg in wax paper and keep cool until needed.
