To Boil Bacon

Instructions

  1. If the bacon is very highly salted and dried, soak it for an hour.
  2. Scrape and wash the bacon well.
  3. Cover it plentifully with cold water and let it heat and boil slowly.
  4. Remove all the scum with care as it rises.
  5. When a fork or skewer will penetrate the bacon easily, lift it out.
  6. Strip off the skin.
  7. Strew raspings of bread over the top, or grate upon it a hard-crust which has been toasted until crisp throughout; or use the bread recommended at page 103 if at hand.
  8. Dry it a little before the fire, or set it for a few minutes into a gentle oven.
