To Boil Bacon

Ingredients
- bacon
- cold water
- bread raspings or toasted hard crust
Instructions
- If the bacon is very highly salted and dried, soak it for an hour.
- Scrape and wash the bacon well.
- Cover it plentifully with cold water and let it heat and boil slowly.
- Remove all the scum with care as it rises.
- When a fork or skewer will penetrate the bacon easily, lift it out.
- Strip off the skin.
- Strew raspings of bread over the top, or grate upon it a hard-crust which has been toasted until crisp throughout; or use the bread recommended at page 103 if at hand.
- Dry it a little before the fire, or set it for a few minutes into a gentle oven.
