Lobster Butter

Instructions

  1. Pound the coral of one or two fresh hen lobsters to the smoothest possible paste, or rub it through a fine sieve first if preferred.
  2. Mix the pounded coral with an equal proportion of fresh firm butter in the mortar.
  3. Add a moderate seasoning of mace and cayenne, with a little salt if needed.
  4. Thoroughly blend the whole mixture together.
  5. Set it aside in a cool larder, or place it over ice until it is firm enough to be made into pats.
  6. Serve garnished with curled parsley, or with any light foliage that will contrast well with its brilliant colour.
