Lobster Butter

Ingredients
- 1–2 fresh hen lobsters, coral only
- equal proportion fresh firm butter
- moderate mace
- moderate cayenne pepper
- small pinch salt
Instructions
- Pound the coral of one or two fresh hen lobsters to the smoothest possible paste, or rub it through a fine sieve first if preferred.
- Mix the pounded coral with an equal proportion of fresh firm butter in the mortar.
- Add a moderate seasoning of mace and cayenne, with a little salt if needed.
- Thoroughly blend the whole mixture together.
- Set it aside in a cool larder, or place it over ice until it is firm enough to be made into pats.
- Serve garnished with curled parsley, or with any light foliage that will contrast well with its brilliant colour.
