To Dress a Loin of Mutton Like Venison

Ingredients
- 1 loin of mutton
- 1 pint water
- 1 large onion
- 0.5 pint port wine
- 1 spoonful vinegar
- thyme and parsley
- pepper and salt
- bones from the loin
Instructions
- Skin and bone the loin of mutton.
- Lay the mutton into a stewpan or braising-pan with a pint of water, a large onion stuck with a dozen cloves, half a pint of port wine, and a spoonful of vinegar.
- Bring to a boil, then add a small faggot of thyme and parsley, pepper, and salt.
- Let it stew for three hours, turning it often.
- Make gravy from the reserved bones.
- Add the bone gravy to the mutton at intervals during cooking as needed.
