To Dress a Loin of Mutton Like Venison

Instructions

  1. Skin and bone the loin of mutton.
  2. Lay the mutton into a stewpan or braising-pan with a pint of water, a large onion stuck with a dozen cloves, half a pint of port wine, and a spoonful of vinegar.
  3. Bring to a boil, then add a small faggot of thyme and parsley, pepper, and salt.
  4. Let it stew for three hours, turning it often.
  5. Make gravy from the reserved bones.
  6. Add the bone gravy to the mutton at intervals during cooking as needed.
