Soubise

Ingredients
- 2 lbs. onions, white part only
- 2 to 3 oz. butter
- 3/4 pint veal gravy
- salt
- cayenne
- 1/4 pint cream
Instructions
- Skin, slice, and mince the white part only of the mild onions.
- Stew them gently in the butter over a very gentle fire until they are reduced to a pulp (30 minutes to 1 hour).
- Pour the rich veal gravy to them.
- Add salt and cayenne if needed.
- Skim off the fat entirely.
- Press the sauce through a sieve.
- Heat it in a clean stewpan.
- Mix it with the boiling cream.
- Serve directly.
