Green Mint Vinegar

Ingredients

Instructions

  1. Select young mint leaves stripped from the stems and slightly chop or bruise them.
  2. Put the prepared mint into bottles, filling them nearly to the necks.
  3. Add vinegar to the bottles, as you would for tarragon vinegar.
  4. Leave to infuse for forty days.
  5. Strain off the vinegar and bottle it for use.
