Anchovy Sauce

Ingredients

Instructions

  1. Heat half a pint of good melted butter.
  2. Add three dessertspoonsful of essence of anchovies, a quarter teaspoonful of mace, and a rather high seasoning of cayenne.
  3. Alternatively, pound the flesh of two or three fine mellow anchovies very smooth and mix with the boiling butter.
  4. Simmer for a minute or two.
  5. Strain the sauce if needful.
  6. Add the spices, give it a boil, and serve.
