Stir-fried Sliced Pork

  1. Cut equal parts lean and fatty pork into thin slices.
  2. Mix with light soy sauce (清醬).
  3. Heat oil in the wok and stir-fry the pork.
  4. When you hear it sizzle and sound loud, add dark soy sauce (醬), water, scallion, melon, winter bamboo shoot, and Chinese chive sprout.
  5. Remove from the wok with vigorous, fierce heat—火候 (heat control and timing) must be intense to achieve proper wok hei.
