Common Lobster Sauce

Ingredients

Instructions

  1. Add essence of anchovies, pounded mace, and cayenne to the melted butter.
  2. Bring the sauce to a boil.
  3. Stir in the cream if available.
  4. Add the diced lobster flesh cut into equal-sized pieces.
  5. Keep the saucepan by the side of the fire until the fish is quite heated through, but do not let the sauce boil again.
  6. Serve very hot.
