Stuffed Bread Morsels

Ingredients

Instructions

  1. Chop chicken liver, sweetbreads, and (optional, par-boiled) gizzard fine, and cook with chopped onion, prosciutto, and butter; season with salt, pepper, and nutmeg.
  2. Add a scant teaspoon of flour, moisten with meat juice or broth, boil, then stir in beaten egg until the filling sets; finish with a pinch of Parmesan.
  3. Dice crustless stale bread into small pieces and spread filling generously on one side of each; flour that side half an hour before frying.
  4. Pour plenty of beaten egg over the pieces and fry them filling-side down until gilded.
