Mock Crab (False Crab)

Ingredients
- 2 whole yellow croaker (huang yu)
- 4 whole salted duck eggs
- chicken stock (gao tang)
- shiitake mushrooms (xiang gu)
- scallions (cong)
- ginger juice (jiang zhi)
- rice wine (jiu)
- vinegar (cu)
Instructions
- Cook two yellow croaker until done. Remove all meat carefully from the bones. Break four raw salted duck eggs and mix them until uniform, but do not combine this mixture with the fish meat—keep them distinct.
- Heat oil in a wok. When hot, pour in the chicken stock (gao tang) and bring to a rolling boil. Gently stir the egg mixture into the broth until evenly dispersed. Add the shiitake mushrooms, scallions, ginger juice, and rice wine. Fold in the reserved fish meat with care to preserve its texture.
- When serving, add vinegar (cu) to each bowl according to taste.
