Beef Roll, or Canellon de Bœuf (Entrée)

Ingredients
- 2 lbs lean and very tender beef
- 1 lb bacon
- 1 large teaspoonful pepper
- salt
- 1 small nutmeg
- 1 lemon
- flour and water paste
- butter
- brown gravy
Instructions
- Chop and mix thoroughly two pounds of lean and very tender beef with one pound of slightly striped bacon.
- Season the mixture with pepper, salt, nutmeg (or mace), and either grated lemon rind or minced thyme and parsley.
- Form the whole into a thick rouleau (roll).
- Wrap a buttered paper around the roll.
- Enclose the wrapped roll in a paste made of flour and water.
- Send it to a moderate oven for a couple of hours.
- Remove the paper and the crust.
- Serve the meat with a little brown gravy.
