The Cavalier's Broil

Instructions

  1. Half roast, stew, or parboil a small or moderate-sized shoulder of mutton.
  2. Lift it into a hot dish and score it on both sides down to the bone.
  3. Season it well with fine salt and cayenne or pepper.
  4. Finish cooking it upon the gridiron over a brisk fire.
  5. Skim the fat from any gravy that may have flowed from the meat.
  6. Keep the dish containing the gravy quite hot to receive the joint again.
  7. Warm a cupful of pickled mushrooms.
  8. Mince part of the mushrooms.
  9. Strew the minced mushrooms over the broil when it is ready to be served.
  10. Arrange the whole mushrooms round the broil.
  11. Send it instantly to table.
