Caper Crostini

  1. Prepare the ingredients: coarsely chop capers; wash currants; cut pine nuts in three; dice prosciutto; cut candied peel small.
  2. Caramelize a heaped teaspoon of flour with two teaspoons of sugar until brown, then add half a glass of water with a little vinegar; boil to dissolve lumps.
  3. Add all ingredients at once and boil ten minutes, tasting for a balanced sweet-and-sharp flavor.
  4. Spread the warm mixture on fried or toasted bread; serve cold, even as a mid-meal appetizer.
