Caper Crostini

Ingredients
- g capers in vinegar
- g powdered sugar
- g currants (uva passolina)
- g pine nuts
- g candied peel
- prosciutto
- tsp flour
- vinegar
- bread
Instructions
- Prepare the ingredients: coarsely chop capers; wash currants; cut pine nuts in three; dice prosciutto; cut candied peel small.
- Caramelize a heaped teaspoon of flour with two teaspoons of sugar until brown, then add half a glass of water with a little vinegar; boil to dissolve lumps.
- Add all ingredients at once and boil ten minutes, tasting for a balanced sweet-and-sharp flavor.
- Spread the warm mixture on fried or toasted bread; serve cold, even as a mid-meal appetizer.
