Salmon Pudding, to be Served Hot or Cold

Ingredients

Instructions

  1. Pound, chop fine, or rub through a sieve the cold boiled salmon, removing all bone and skin.
  2. Blend the salmon lightly but thoroughly with the bread-crumbs, essence of anchovies, cream, salt, cayenne, and whisked eggs.
  3. Press the mixture closely and evenly into a deep dish or mould that has been buttered in every part.
  4. Bake for one hour in a moderate oven.
