Instructions

  1. Clean the truffles with a damp brush and slice them very thin.
  2. Layer in a tinned copper dish, alternating truffle slices with thin Parmesan slices, starting with truffles.
  3. Dress with salt, pepper, and plenty of good oil; heat just to a boil.
  4. Squeeze a lemon over and remove from heat at once; optionally add a tiny bit of butter.
  5. Alternatively serve raw thin-sliced with salt, pepper, and lemon; or fold into buttered scrambled eggs.
