Apple Soup

Ingredients
- 5 pints mutton broth, bouillon, or shin of beef stock
- 1.5 pounds cooking apples
- 1 small teaspoon powdered ginger
- 0.5 teaspoon pepper
- rice
Instructions
- Clear the fat from the broth or stock and strain it through a fine sieve.
- Bring the strained broth to a boil.
- Add the apples and stew them down very gently to a smooth pulp, about 25 to 40 minutes.
- Press the entire mixture through a strainer.
- Add the powdered ginger and plenty of pepper to taste.
- Simmer the soup for a couple of minutes.
- Skim the soup.
- Serve very hot, accompanied by a dish of boiled rice prepared as for curries.
