To Roast or Bake Potatoes

Instructions

  1. Scrub and wash the potatoes exceedingly clean, assorted as nearly as possible to the same size.
  2. Wipe them very dry.
  3. To roast: place them in a Dutch oven before the fire at a distance from it, and keep them often turned. Alternatively, to bake: arrange them in a coarse dish and bake in a moderate oven.
  4. Dish them neatly in a napkin and send them very hot to table.
  5. Serve cold butter with them.
