Mackerel Stewed with Wine

Ingredients
- 1 teaspoonful flour
- 2 ounces butter
- 1/4 teaspoonful mace
- 1/2 teaspoonful salt
- cayenne
- 3 wineglassesful claret
- 2 whole mackerel
- 1 teaspoonful made mustard
- lemon-juice
Instructions
- Work the flour and butter together very smoothly.
- Put them into a stewpan and stir or shake them round over the fire until the butter is dissolved.
- Add the mace, salt, and cayenne to the pan.
- Pour in the claret by slow degrees.
- When the sauce boils, lay in the two cleaned and dried mackerel.
- Stew them very softly for fifteen to twenty minutes, turning them when half done.
- Lift the mackerel out and dish them carefully.
- Stir the made mustard into the sauce, give it a boil, and pour it over the fish.
