Rich Melted Butter

Ingredients
- 0.5 pint cold water
- 0.5 saltspoon salt
- 1 dessertspoon flour
- 4–6 ounces well-flavoured butter
Instructions
- Mix the flour, salt, and cold water together to a very smooth batter.
- Pour this mixture into a delicately clean saucepan and add the well-flavoured butter, cut into small bits.
- Shake the sauce strongly around the pan, almost without cessation, until the ingredients are perfectly blended and it is on the point of boiling.
- Let it simmer for two or three minutes.
- Serve when it is just at the point of simmering, before it comes to a full boil.
