Rich Melted Butter

Instructions

  1. Mix the flour, salt, and cold water together to a very smooth batter.
  2. Pour this mixture into a delicately clean saucepan and add the well-flavoured butter, cut into small bits.
  3. Shake the sauce strongly around the pan, almost without cessation, until the ingredients are perfectly blended and it is on the point of boiling.
  4. Let it simmer for two or three minutes.
  5. Serve when it is just at the point of simmering, before it comes to a full boil.
