Pot Roast Scented with Garlic and Rosemary

Instructions

  1. Cook the meat as a pot roast (previous recipe), but instead of studding it, toss one whole garlic clove and two rosemary sprigs into the pan.
  2. Strain the reduced juices without pressing before serving.
  3. Optionally surround with potatoes or greens cooked separately, and dress with a little tomato sauce. A leg of lamb works well this way, cooked between two fires.
