Salmon Baked over Mashed Potatoes

Ingredients

• salmon middle
• mashed potatoes

Instructions

1. Arrange mashed potatoes in a baking dish, or alternatively arrange pared and halved potatoes as the base.
2. Lay the salmon middle upon the potatoes, raising it above them by means of a wire stand as meat is suspended in England.
3. Bake until the salmon is cooked through.
