Common Farm-House Sausages

Ingredients
- 1 pound pork (fat and lean, mixed)
- 0.5 ounce salt
- 0.25 ounce pepper
- as needed pork casings (skins)
Instructions
- Chop the pork fat and lean together coarsely until nearly equal parts are combined.
- Season with half an ounce of salt and a quarter ounce of pepper per pound of meat, mixing well.
- Turn the casings inside out, scrape them very thin, wash them with great care, and wipe them completely dry.
- Stuff the seasoned sausage-meat into the prepared casings.
- Twist the filled casings into links.
- Hang the sausages in a cool, airy larder to store.
