Instructions

  1. Chop the pork fat and lean together coarsely until nearly equal parts are combined.
  2. Season with half an ounce of salt and a quarter ounce of pepper per pound of meat, mixing well.
  3. Turn the casings inside out, scrape them very thin, wash them with great care, and wipe them completely dry.
  4. Stuff the seasoned sausage-meat into the prepared casings.
  5. Twist the filled casings into links.
  6. Hang the sausages in a cool, airy larder to store.
