Dressed Cucumbers

Instructions

  1. Cut 1 or 2 freshly gathered cucumbers into lengths of an inch or slightly more.
  2. Take off the rind from each length.
  3. Pare the cucumbers round and round into thin ribbons until you reach the watery interior part.
  4. Discard the watery interior part.
  5. Sprinkle the ribbons with cayenne and fine salt.
  6. Leave them to drain a little.
  7. Arrange the ribbons lightly in a clean dish.
  8. Mix very fine oil well with chili vinegar, or with equal parts of chili and common vinegar.
  9. Sauce the cucumbers with the oil and vinegar mixture.
  10. If desired, add a teaspoonful or more of eschalot-steeped or pickled vinegar to the dish.
