Very Good Light Paste

Instructions

  1. Mix the sifted flour with six ounces of fresh lard and form into a smooth paste with cold water.
  2. Press the buttermilk from ten ounces of butter and form it into a ball by twisting it in a clean cloth.
  3. Roll out the paste and place the ball of butter in the middle.
  4. Close it like an apple-dumpling and roll it very lightly until less than an inch thick.
  5. Fold the ends into the middle, dust the board and paste-roller with a little flour, and roll the paste thin a second time.
  6. Set it aside for three or four minutes in a very cool place.
  7. Give it two more turns, allowing a few minutes rest between each.
  8. After the second rest, roll it out twice more, folding it in three each time.
  9. Send to the oven as soon as possible after making.
