Hot Crab, or Lobster

Ingredients
- crab or lobster flesh
- a few bits good butter
- 1 to 2 teaspoonsful common or chili vinegar
- cayenne pepper
- a little nutmeg
- 1 spoonful good meat jelly
- 1.5 ounce butter
Instructions
- Slice quite small or pull the flesh of crab or lobster into light flakes with a couple of forks.
- Put the flesh into a saucepan with a few bits of good butter lightly rolled in flour.
- Heat slowly over a gentle fire.
- Pour over and thoroughly mix in from one to two teaspoonsful (or more) of common or chili vinegar.
- If using common vinegar, add a tolerable seasoning of cayenne.
- Grate in a little nutmeg.
- When the whole is well heated, serve immediately in the shell of the crab or lobster, or in scallop-shells.
- Serve plain, or with bread-crumbs over.
- Add a spoonful of good meat jelly if desired, as a great improvement to the dish.
